Ingredients
  

Crust and Filling
  • 1 9-inch 9-inch pie crust Store-bought or homemade
  • 3 cups fresh peaches, sliced Use ripe peaches for best flavor
  • 3 large eggs Large eggs are preferred
  • 1 cup heavy cream Can substitute with half-and-half for a lighter version
  • 1 cup sugar Adjust to taste for sweetness
  • 1 teaspoon vanilla extract Pure vanilla extract is best
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg Optional: can add cinnamon for extra flavor

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Place the pie crust in a 9-inch pie pan and set aside.
  3. Arrange the sliced peaches evenly in the bottom of the pie crust.
Mixing and Baking
  1. In a mixing bowl, whisk together the eggs, heavy cream, sugar, vanilla extract, salt, and nutmeg until smooth.
  2. Pour the custard mixture over the peaches in the pie crust.
  3. Bake in the preheated oven for 45-50 minutes or until the custard is set and lightly golden.
  4. Allow to cool before serving.

Notes

Serve warm or chilled, with whipped cream or vanilla ice cream. Store leftovers in the refrigerator for 3-4 days, covered with plastic wrap or aluminum foil. Freezing is possible but best enjoyed fresh.
