  • 8 cups Tender greens (like mixed salad greens or arugula) Can use any mix of leafy greens you enjoy.
  • 1 cup Fresh herbs (such as parsley, chives, and tarragon) Adjust according to your taste.
  • 1/2 cup Pickled onions Add to taste.
Vinaigrette Ingredients
  • 1/3 cup Olive oil
  • 3 tablespoons Red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon Salt Adjust to taste.
  • 1/4 teaspoon Pepper Adjust to taste.

Method
 

Preparation
  1. In a large bowl, combine the tender greens and fresh herbs.
  2. Add the pickled onions on top.
  3. In a separate small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the vinaigrette.
  4. Drizzle the vinaigrette over the salad just before serving and toss gently to combine.

Notes

Serve immediately after making to keep the greens fresh and crisp. For added crunch, consider including nuts or seeds. Make the vinaigrette a day ahead for better flavor.
