Preparation
- Preheat your oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper.
- In a shallow bowl, mix breadcrumbs, grated Parmesan, garlic powder, onion powder, paprika, lemon zest, salt, and pepper until well combined.
- Set up a breading station with three bowls: one for flour, one for beaten eggs, and one for the breadcrumb mixture.
- Dredge each chicken tender first in flour, shaking off excess, dip in eggs, then coat thoroughly with the breadcrumb mixture.
- Place the coated chicken tenders on the prepared baking sheet and spray with cooking spray or drizzle with olive oil for extra crunch.
Cooking
- Bake for 15-20 minutes, until the chicken is golden brown and fully cooked. Serve with lemon wedges.
Notes
For an extra zing, add more lemon juice to the breadcrumb mixture. You can use different herbs and spices in the breadcrumb mix for variety, like Italian seasoning or chili powder. Make sure not to overcrowd the baking sheet for the best crispy texture. Store leftovers in an airtight container in the refrigerator for about 3-4 days.
