Preparation
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
- Pat salmon fillets dry with paper towels, then arrange them on the prepared baking sheet.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, fresh dill, dried oregano, salt, and pepper.
- Spoon the lemon-herb mixture evenly over each salmon fillet.
- Scatter the halved cherry tomatoes around the salmon fillets on the baking sheet.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven and sprinkle the crumbled feta cheese over the warm salmon and tomatoes.
- Serve immediately, optionally garnished with extra fresh dill or lemon wedges.
Notes
For best results, use fresh, wild-caught salmon. Adjust baking time based on the thickness of your salmon fillets; they are done when they flake easily with a fork. Serve with a side of roasted vegetables or a fresh salad.
