  • 4 fillets Salmon fillets skin on or off
  • 2 tbsp Olive oil extra virgin
  • 1 large Lemon, juiced
  • 3 cloves Garlic, minced
  • 2 tbsp Fresh dill, chopped
  • 1 tsp Dried oregano
  • 0.5 tsp Salt or to taste
  • 0.25 tsp Black pepper freshly ground
  • 1 cup Cherry tomatoes, halved
  • 0.5 cup Feta cheese, crumbled

Method
 

Preparation
  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Pat salmon fillets dry with paper towels, then arrange them on the prepared baking sheet.
  3. In a small bowl, whisk together olive oil, lemon juice, minced garlic, fresh dill, dried oregano, salt, and pepper.
  4. Spoon the lemon-herb mixture evenly over each salmon fillet.
  5. Scatter the halved cherry tomatoes around the salmon fillets on the baking sheet.
  6. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Remove from the oven and sprinkle the crumbled feta cheese over the warm salmon and tomatoes.
  8. Serve immediately, optionally garnished with extra fresh dill or lemon wedges.

Notes

For best results, use fresh, wild-caught salmon. Adjust baking time based on the thickness of your salmon fillets; they are done when they flake easily with a fork. Serve with a side of roasted vegetables or a fresh salad.
