Ingredients
  

Muffin Batter
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1 cup milk Use almond milk or soy milk as a substitute if needed.
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
For Serving
  • to taste Maple syrup For drizzling.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the milk, melted butter, eggs, and vanilla extract.
Baking
  1. Pour the wet ingredients into the dry ingredients and mix until just combined.
  2. Divide the batter evenly among the muffin cups.
  3. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  4. Allow to cool slightly before serving.
Serving
  1. Drizzle with maple syrup or sprinkle with powdered sugar before enjoying.
