Ingredients
  

For the Skewers
  • 1 lb boneless, skinless chicken breast
  • 1/2 cup buffalo sauce for marinating chicken
  • skewers Skewers soaked in water for 30 minutes to prevent burning
For the Salad
  • 1 cup romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup blue cheese crumbles
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your grill or grill pan to medium-high heat.
  2. Cut the chicken breast into bite-sized pieces and marinate them in buffalo sauce for at least 30 minutes.
  3. Thread the marinated chicken onto skewers.
Cooking
  1. Grill the skewers for 5-7 minutes on each side or until the chicken is cooked through.
  2. Once the skewers are finished, let them rest for a couple of minutes before slicing the chicken off the skewers.
Assembly
  1. In a large bowl, mix together the chopped romaine, cherry tomatoes, cucumber, red onion, and blue cheese.
  2. Add the sliced chicken to the salad mixture, drizzle with additional buffalo sauce if desired, and toss gently.
  3. Season with salt and pepper to taste and serve immediately.

Notes

For added flavor, try marinating the chicken overnight in buffalo sauce. You can use different types of lettuce or add more veggies, like bell peppers or avocado, for more variety. Store leftover salad in an airtight container in the refrigerator, best consumed within 2-3 days. Serve salad with extra buffalo sauce or blue cheese on the side for more flavor.
