- In a large pan, heat oil over medium heat. Add chopped onion and sauté until translucent.
- Add minced garlic and ginger, and cook for an additional minute.
- Stir in curry powder and cook for about 30 seconds until fragrant.
- Add chickpeas and coconut milk, and stir to combine.
- Bring to a simmer and cook for about 10 minutes until slightly thickened.
- Stir in fresh spinach and cook until wilted.
- Remove from heat, add lime juice, and season with salt and pepper to taste. Serve warm.
Notes
Serve with rice, quinoa, naan, or pita bread. Add lime slices for extra flavor. Adjust spice level with more or less curry powder.
