Ingredients
  

Wet Ingredients
  • 2 cups grated zucchini Squeeze out excess moisture
  • 1 cup sugar You can reduce for less sweetness
  • 1/2 cup vegetable oil
  • 2 large eggs Can substitute with flax eggs for vegan option
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour Can substitute with whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon Feel free to experiment with spices like nutmeg
  • 1/2 teaspoon salt
Optional Add-Ins
  • 1/2 cup chopped nuts Stir in if desired
  • 1/2 cup chocolate chips Optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. In a large bowl, mix together the grated zucchini, sugar, vegetable oil, eggs, and vanilla until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Fold in the nuts and chocolate chips if using.
  6. Pour the batter into the prepared baking pan and smooth out the top.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow to cool before cutting into bars.

Notes

Can be served warm or at room temperature. Pair with whipped cream or ice cream for dessert. Store in an airtight container for up to 3 days or refrigerate for up to a week. Freezes well for up to 3 months.
