Ingredients
  

Meatball Mixture
  • 1 lb ground meat (beef, chicken, or turkey)
  • 1/2 cup breadcrumbs
  • 1/4 cup curry powder
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
Crunchy Topping
  • 1/4 cup chopped peanuts
  • 1/2 cup shallots, thinly sliced
  • 1/4 cup oil for frying
Garnish
  • Fresh cilantro for garnish

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix ground meat, breadcrumbs, curry powder, egg, garlic, salt, and pepper until well combined.
  3. Form the mixture into meatballs and place them on a baking sheet.
Cooking
  1. Bake meatballs in the preheated oven for 20-25 minutes until cooked through.
  2. Meanwhile, heat oil in a frying pan over medium heat.
  3. Fry shallots until golden and crispy, then remove and drain on paper towels.
  4. Allow meatballs to cool slightly before serving.
Serving
  1. Top each meatball with shallot crispies and chopped peanuts.
  2. Garnish with fresh cilantro and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, warm in the microwave or oven until heated through. For a vegetarian option, substitute ground meat with plant-based meat or finely chopped vegetables mixed with chickpeas.
