  1. Preheat your oven to the lowest setting, typically around 170-200°F (75-95°C), and line a baking sheet with parchment paper or a silicone mat.
  2. Combine the mixed berries, lemon juice, and optional sweetener in a food processor or blender; blend until completely smooth.
  3. Pour the fruit puree onto the prepared baking sheet, spreading it into a thin, even layer, approximately 1/8 to 1/4 inch thick.
  4. Bake for 2-4 hours, or until the fruit leather is no longer sticky to the touch and peels easily from the parchment paper.
  5. Allow the fruit leather to cool completely, then peel it off the parchment paper and cut it into strips, rolling each strip into a 'roll-up'.

Notes

For best results, use ripe fruit for natural sweetness. Adjust sweetener to your preference and the tartness of your fruit. Store fruit roll-ups in an airtight container at room temperature for up to two weeks.
