- Preheat your oven to the lowest setting, typically around 170-200°F (75-95°C), and line a baking sheet with parchment paper or a silicone mat.
- Combine the mixed berries, lemon juice, and optional sweetener in a food processor or blender; blend until completely smooth.
- Pour the fruit puree onto the prepared baking sheet, spreading it into a thin, even layer, approximately 1/8 to 1/4 inch thick.
- Bake for 2-4 hours, or until the fruit leather is no longer sticky to the touch and peels easily from the parchment paper.
- Allow the fruit leather to cool completely, then peel it off the parchment paper and cut it into strips, rolling each strip into a 'roll-up'.
Notes
For best results, use ripe fruit for natural sweetness. Adjust sweetener to your preference and the tartness of your fruit. Store fruit roll-ups in an airtight container at room temperature for up to two weeks.
