Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the oat flour, baking soda, and salt. Set aside.
- In a separate large bowl, combine the melted coconut oil, maple syrup, egg, and vanilla extract; whisk until smooth.
Baking
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the dark chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between cookies.
- Bake for 10-12 minutes, or until the edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For best results, ensure your coconut oil is melted but not hot when combining with wet ingredients. You can substitute almond flour for oat flour for a different texture.
