Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

  3. In a separate large bowl, combine the melted coconut oil, maple syrup, egg, and vanilla extract; whisk until smooth.
Baking
  1. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the dark chocolate chips.
  2. Drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between cookies.
  3. Bake for 10-12 minutes, or until the edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

For best results, ensure your coconut oil is melted but not hot when combining with wet ingredients. You can substitute almond flour for oat flour for a different texture.
