  • 1 can chili (or homemade chili) Homemade chili must not be too watery.
  • 2 cups shredded cheese (cheddar or a blend) Feel free to use your favorite cheese blend.
  • 1 bag frozen tater tots Can substitute with other frozen potato options.
  • 1 can diced tomatoes (optional) Adds freshness to the dish.
  • 1 medium onion, chopped (optional) Enhances the flavor of the beef.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, brown the ground beef over medium heat, adding onion if desired, and season with salt and pepper. Drain excess fat.
  3. In a large baking dish, layer the cooked beef, chili, and diced tomatoes.
  4. Top with a layer of tater tots, then sprinkle with shredded cheese.
Baking
  1. Bake in the oven for 25-30 minutes, or until the tater tots are golden and crispy and the cheese is melted.

Notes

Serve hot with extra cheese, sour cream, or fresh herbs. Goes well with a fresh salad or tortilla chips. For storing, cool completely and cover tightly; refrigerate for up to 3 days or freeze for up to 2 months.
