  • 1 block firm tofu Press to remove excess moisture
  • 2 cups celery, chopped
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or agave syrup Use agave for a vegan option
  • 1/4 cup green onions, sliced
  • 1/4 cup cilantro, chopped
  • Salt and pepper To taste

Method
 

Preparation
  1. Press the tofu to remove excess moisture and then cube it.
  2. In a bowl, mix together soy sauce, sesame oil, rice vinegar, honey, salt, and pepper.
  3. In a large bowl, combine chopped celery, tofu, green onions, and cilantro.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve chilled and enjoy!

Notes

Store any leftover salad in an airtight container in the refrigerator. It is best consumed within 1 to 2 days for optimal freshness. The flavors may deepen as it sits, but the celery should still remain crisp. For a spicier kick, consider adding some crushed red pepper flakes to the dressing.
