Preparation
- Preheat oven to 400°F (200°C) and place cherry tomatoes in a large baking dish. Add the block of feta cheese to the center of the tomatoes.
- Drizzle generously with olive oil, then sprinkle with minced garlic, salt, and black pepper. Toss to coat the tomatoes.
Baking & Cooking
- Bake for 30 minutes, or until the tomatoes have burst and the feta is soft and slightly golden. Meanwhile, cook the pasta according to package directions.
Combine & Serve
- Remove the baking dish from the oven and use a fork to mash the feta and burst tomatoes together, creating a creamy sauce. Drain the cooked pasta and add it to the baking dish, tossing to combine with the sauce.
- Stir in the fresh basil and serve immediately.
Notes
For an extra kick, add a pinch of red pepper flakes with the garlic. Ensure your baking dish is large enough to mix the pasta directly in it for easy cleanup.
