  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 package taco seasoning mix Use spicy taco seasoning for added heat if desired.
  • 1 can diced tomatoes with green chilies
  • 1 can black beans Drained and rinsed.
  • 4 cups crushed Doritos Use cheese-flavored Doritos for added flavor.
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup chopped green onions Optional garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Stir in the taco seasoning, diced tomatoes, and black beans; cook for 5 minutes.
  4. In a large baking dish, layer half of the crushed Doritos.
  5. Spread the beef mixture over the Doritos, then add half of the cheese.
  6. Top with the remaining Doritos, sour cream, and finally the remaining cheese.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbling and golden.
Serving
  1. Garnish with chopped green onions if desired and serve hot.

Notes

You can add extra toppings like salsa or guacamole. It pairs well with a side of salad or fresh fruit. If you have leftovers, let the casserole cool completely, cover it tightly, and store in the refrigerator for up to 3-4 days. To reheat, simply place in the oven at 350°F until warmed through.
