Making the Pancakes
- In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, and salt.
- In a separate bowl, combine the wet ingredients: sweet potato puree, egg, milk, melted butter, brown sugar (if using), and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until just combined, avoiding overmixing; lumps are fine.
- Heat a lightly greased griddle or non-stick pan over medium heat, then pour about 1/4 cup of batter per pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through, flipping once.
- Serve immediately with your favorite toppings.
Notes
For extra flavor, add a pinch of cinnamon or nutmeg to the batter. Serve with maple syrup, fresh fruit, or a dollop of Greek yogurt.
