Sweet Potato Casserole with Marshmallows

Ingredients
  

Sweet Potato Mixture
  • 4 cups sweet potatoes cooked and mashed
  • 1/2 cup unsalted butter melted
  • 1/2 cup light brown sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
Topping
  • 3 cups mini marshmallows

  • 9x13 inch Baking Dish
  • Measuring Cups and Spoons

Method
 

Instructions
  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
  2. In a large bowl, combine the mashed sweet potatoes, melted butter, brown sugar, milk, vanilla extract, and salt. Mix until well combined and smooth.
  3. Spread the sweet potato mixture evenly into the prepared baking dish.
  4. Bake for 20-25 minutes, or until the casserole is heated through.
  5. Remove the casserole from the oven and top evenly with mini marshmallows. Return to the oven and bake for an additional 5-10 minutes, or until marshmallows are golden brown and toasted. Watch carefully to prevent burning.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg to the sweet potato mixture.
