Preparation
- Preheat the oven to 375°F (190°C).
- In a bowl, mix together sundried tomatoes, olives, feta cheese, olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Place the halibut fillets on a baking sheet lined with parchment paper.
- Spoon the sundried tomato mixture over the top of the halibut.
Cooking
- Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.
- Garnish with fresh parsley before serving.
Notes
Serve hot with a fresh green salad, steamed vegetables, or a side of rice. Pairs well with white wines like Sauvignon Blanc or light Pinot Grigio. For storage, refrigerate leftovers in an airtight container for up to two days. To reheat, use an oven at 350°F (175°C) for about 10 minutes.
