Making the Cookies
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine the peanut butter, sugar substitute, egg, vanilla extract, baking soda, and salt if you are using it; mix until a cohesive dough forms.
- Roll the dough into 12-15 balls, each approximately 1-inch in diameter, and arrange them on the prepared baking sheet; flatten each ball with a fork to create a classic crosshatch pattern.
- Bake the cookies for 10-12 minutes, or until their edges are lightly golden and the centers are set.
- Allow the cookies to cool on the baking sheet for a few minutes before carefully transferring them to a wire rack to cool completely.
Notes
For the best results, use a natural peanut butter that does not contain added sugars. Feel free to adjust the amount of sweetener to match your personal taste preference.
