  • 1 cup All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Cinnamon
  • ½ teaspoon Salt

  • ½ cup Unsalted butter softened
  • ¾ cup Erythritol granular
  • 2 Eggs large
  • 1 teaspoon Vanilla extract
  • ¼ cup Unsweetened applesauce

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
Mixing and Baking
  1. In a separate bowl, cream together softened butter and erythritol until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract and applesauce.
  2. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. Drop spoonfuls of dough onto the prepared baking sheets, spacing them apart.
  4. Bake for 10-12 minutes, or until edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
