Ingredients
  

For the Cake
  • 2 cups Flour all-purpose
  • 2 tsp Baking powder
  • 1/2 tsp Salt
  • 1/2 cup Unsalted butter 113g, softened
  • 1 1/2 cups Granulated sugar
  • 3 Large eggs
  • 1 tsp Vanilla extract
  • 1 cup Milk whole
For the Cream and Decoration
  • 3 cups Heavy cream cold
  • 1/2 cup Powdered sugar
  • 1 tsp Vanilla extract
  • 2 lbs Fresh strawberries hulled and sliced

Method
 

Making the Cake Layers
  1. Preheat oven to 350°F (175°C) and grease and flour two 8-inch round cake pans.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. Cream softened butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then mix in vanilla extract.
  5. Alternate adding dry ingredients and milk to the wet mixture, starting and ending with dry ingredients.
  6. Divide batter evenly between pans and bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Let cakes cool in pans for 10 minutes, then invert onto a wire rack to cool completely.
Preparing the Cream
  1. In a large chilled bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Assembling the Cake
  1. Place one cake layer on a serving plate.
  2. Spread a layer of whipped cream over the cake, then arrange a portion of sliced strawberries.
  3. Top with the second cake layer, then cover the top and sides with the remaining whipped cream.
  4. Decorate with remaining fresh strawberries.
  5. Chill the cake for at least 1 hour before serving.

Notes

For best results, ensure all dairy ingredients are well chilled before whipping the cream. You can also add a touch of lemon zest to the cake batter for extra flavor.
