Ingredients

  • 8 oz noodles (your choice, e.g., rice noodles or egg noodles)
  • 1 lb beef (sliced thin)
Sauce ingredients
  • 1/4 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp honey
  • 2 cloves garlic (minced)
  • 1 tsp ginger (grated)
Garnishes
  • 1/4 cup scallions (sliced, for garnish)
  • Crushed peanuts (for garnish, optional)

Method
 

Preparation
  1. Cook the noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat the sesame oil over medium heat. Add the sliced beef and cook until browned and cooked through.
Making the sauce
  1. In a bowl, mix together peanut butter, soy sauce, honey, minced garlic, and ginger until well combined.
  2. Pour the sauce over the cooked beef in the skillet and stir to combine.
Combining
  1. Add the cooked noodles to the skillet and toss everything together until the noodles are well coated with the sauce.
Serving
  1. Serve warm, garnished with sliced scallions and crushed peanuts if desired.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for about 3 days. Reheat in the microwave or a skillet until heated through. Make sure to slice the beef thinly for faster cooking. If the sauce is too thick, add a splash of water to thin it out. Adjust the sweetness of the honey according to taste. For extra crunch, consider adding stir-fried or steamed vegetables like bell peppers or broccoli.
