  • 8 oz Rice noodles Cook according to package instructions.
  • 2 cups Cabbage, shredded
  • 1 cup Carrots, julienned
  • 1 cup Cucumber, sliced
  • 1 cup Bell peppers, thinly sliced
  • 1/2 cup Green onions, chopped
  • 1/4 cup Fresh cilantro, chopped
  • 1 each Avocado, sliced
  • 1/4 cup Peanuts, crushed Optional garnish.
For the sweet garlic lime sauce
  • 3 cloves Garlic, minced
  • 1/4 cup Lime juice
  • 2 tbsp Sugar or honey Use honey for non-vegan option.
  • 3 tbsp Soy sauce
  • 1 tbsp Sesame oil

Method
 

Preparation
  1. Cook rice noodles according to package instructions, then drain and set aside.
  2. In a bowl, combine shredded cabbage, julienned carrots, sliced cucumber, bell peppers, green onions, cilantro, and avocado.
Making the Sauce
  1. In a small saucepan, combine minced garlic, lime juice, sugar (or honey), soy sauce, and sesame oil to make the sweet garlic lime sauce. Heat lightly and stir until the sugar dissolves.
Assembly
  1. In serving bowls, layer the rice noodles and top with the vegetable mixture.
  2. Drizzle the sweet garlic lime sauce over the top.
  3. Garnish with crushed peanuts if desired and serve immediately.

Notes

Serve the Spring Roll Bowl immediately for the freshest taste. Customize your vegetables based on your preferences; bell peppers, carrots, and cucumbers can be swapped for your favorites. For extra protein, consider adding grilled chicken, shrimp, or tofu to the bowl. If you have leftovers, store them in an airtight container. Keep the sweet garlic lime sauce separate to maintain the freshness of the vegetables and noodles.
