Filling Ingredients
  • 1 cup fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup onion, finely chopped
  • 1 clove garlic, minced
  • Salt to taste Salt
  • Pepper to taste Pepper
Pastry Ingredients
  • 1 package puff pastry, thawed 1 sheet
  • 1 large egg, beaten for egg wash
  • Olive oil for brushing Olive oil

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine chopped spinach, cream cheese, feta cheese, onion, garlic, salt, and pepper. Mix well.
  3. Roll out the puff pastry on a floured surface and cut into squares.
  4. Place a spoonful of the spinach mixture in the center of each square.
  5. Fold the pastry over to form triangles and press the edges to seal.
  6. Place the puffs on a baking sheet lined with parchment paper.
  7. Brush the tops with beaten egg for a golden finish.
Baking
  1. Bake for 15-20 minutes or until golden brown.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, place in an oven at 350°F (175°C) until warmed through, or microwave for a quick option. Unbaked puffs can be frozen for up to three months.
