Spinach & Cranberry Stuffed Chicken Breasts

  • 4 boneless, skinless chicken breasts
  • 5 oz fresh spinach chopped
  • 1/2 cup dried cranberries chopped
  • 4 oz cream cheese softened
  • 2 cloves garlic minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Panko breadcrumbs
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish. If chicken breasts are very thick, pound them to an even 1/2-inch thickness using a meat mallet.
  2. In a medium bowl, combine the chopped spinach, dried cranberries, softened cream cheese, minced garlic, Parmesan cheese, and Panko breadcrumbs; mix until well combined.
  3. Carefully slice a pocket into the side of each chicken breast, being careful not to cut all the way through. Divide the spinach and cranberry mixture evenly among the chicken breasts and stuff each pocket.
  4. Season the outside of the stuffed chicken breasts with salt and pepper, then arrange them in the prepared baking dish. Bake for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.

Notes

Ensure chicken breasts are uniformly thick for even cooking. You can use toothpicks to secure the stuffing if needed.
