Preparation
- Whisk together flour, ginger, cinnamon, cloves, baking soda, and salt in a bowl; set aside.
- Cream softened butter and brown sugar until light and fluffy, then beat in molasses, egg, and vanilla extract.
- Gradually add the whisked dry ingredients to the wet ingredients, mixing until a dough forms.
- Divide the dough in half, flatten into discs, wrap in plastic, and chill for at least 30 minutes.
Baking and Decorating
- Preheat oven to 350°F (175°C), line baking sheets with parchment paper, then roll out chilled dough and cut into gingerbread men shapes.
- Place cookies on prepared sheets and bake for 8-10 minutes until edges are firm, then cool on the sheet before transferring to a wire rack.
- Whisk powdered sugar and milk for the icing, and once cookies are completely cool, decorate as desired.
Notes
For extra chewy cookies, be careful not to overbake them. You can store baked cookies in an airtight container at room temperature for up to a week.
