Main Ingredients
  • 2 pounds beef, chuck or stew meat, cut into chunks Choose your preferred cut of meat.
  • 4 cups beef broth Ensure it's gluten-free if needed.
  • 3 cups carrots, sliced Can substitute with other root vegetables.
  • 3 cups potatoes, diced Use any variety of potatoes.
  • 1 medium onion, chopped Yellow or white onions work well.
  • 2 cloves garlic, minced Fresh garlic enhances flavor.
  • 1 tablespoon tomato paste Adds richness to the broth.
  • 1 teaspoon dried thyme Can substitute with fresh thyme.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon black pepper Freshly ground is recommended.
  • 2 tablespoons olive oil For sautéing the meat.
  • to taste chopped fresh parsley for garnish Optional garnish.

Method
 

Preparation
  1. Turn the Instant Pot to 'Sauté' mode and heat the olive oil.
  2. Add the beef and brown it on all sides.
  3. Add the onions and garlic, then sauté until they are fragrant.
  4. Stir in the tomato paste, thyme, salt, and pepper.
  5. Add the sliced carrots, diced potatoes, and beef broth.
  6. Close the lid and set the Instant Pot to 'Manual' mode for 35 minutes.
  7. Allow the pressure to release naturally for 10 minutes, then quick-release the remaining pressure.

Notes

Serve warm on its own or with crusty bread. Can be paired with a fresh salad or steamed vegetables for a complete meal. For a thicker stew, mix cornstarch with water and stir in after cooking.
