Preparation
- Turn the Instant Pot to 'Sauté' mode and heat the olive oil.
- Add the beef and brown it on all sides.
- Add the onions and garlic, then sauté until they are fragrant.
- Stir in the tomato paste, thyme, salt, and pepper.
- Add the sliced carrots, diced potatoes, and beef broth.
- Close the lid and set the Instant Pot to 'Manual' mode for 35 minutes.
- Allow the pressure to release naturally for 10 minutes, then quick-release the remaining pressure.
Notes
Serve warm on its own or with crusty bread. Can be paired with a fresh salad or steamed vegetables for a complete meal. For a thicker stew, mix cornstarch with water and stir in after cooking.
