- In a food processor, combine the pitted dates, rolled oats, nut butter, ground flaxseed, vanilla extract, and salt.
- Process until the mixture is well combined and sticky.
- If using, stir in dark chocolate chips.
- Scoop out tablespoons of the mixture and roll them into balls.
- Place the energy balls on a lined baking sheet or plate.
- Refrigerate for about 30 minutes to firm up.
Notes
Store in an airtight container in the refrigerator for up to a week. Can be frozen for longer storage with layers of parchment paper to prevent sticking.
