  • 1 cup Medjool dates, pitted Fresh dates work best for taste and texture.
  • 1 cup rolled oats Use more if the mixture is too sticky.
  • 1/2 cup nut butter (e.g., almond or peanut butter) Can substitute with sunflower seed butter for nut-free version.
  • 1/4 cup ground flaxseed
  • 1/4 cup dark chocolate chips (optional) Ensure dairy-free if making vegan.
  • 1 tsp vanilla extract
  • a pinch salt

Method
 

Preparation
  1. In a food processor, combine the pitted dates, rolled oats, nut butter, ground flaxseed, vanilla extract, and salt.
  2. Process until the mixture is well combined and sticky.
  3. If using, stir in dark chocolate chips.
  4. Scoop out tablespoons of the mixture and roll them into balls.
  5. Place the energy balls on a lined baking sheet or plate.
  6. Refrigerate for about 30 minutes to firm up.

Notes

Store in an airtight container in the refrigerator for up to a week. Can be frozen for longer storage with layers of parchment paper to prevent sticking.
