  • 1 lb ground beef Can substitute with chicken, turkey or plant-based alternatives.
  • 1 medium onion, chopped
  • 1 medium bell pepper, chopped
  • 1 packet taco seasoning
  • 1 can diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 16 oz pasta, cooked according to package directions Use shells or rotini for a fun twist.
  • 1 cup shredded cheese

Method
 

Preparation
  1. In a skillet, brown the ground beef with the onion and bell pepper until cooked through.
  2. Transfer the beef mixture to the crockpot.
  3. Add the taco seasoning, diced tomatoes, black beans, corn, and cooked pasta to the crockpot.
  4. Stir everything together until well combined.
  5. Cook on low for 4-6 hours or high for 2-3 hours.
  6. Just before serving, stir in the shredded cheese until melted.

Notes

Serve with toppings like sour cream, avocado, or fresh cilantro. Chips or warm tortillas work well on the side. For extra flavor, consider adding garlic or jalapeƱos when browning the meat. If storing leftovers, place them in an airtight container in the fridge for 3-4 days or freeze for up to 3 months. Reheat well before serving.
