Ingredients
  

Pasta Ingredients
  • 12-15 pieces jumbo pasta shells Cook according to package instructions
  • 1 cup cooked shrimp, chopped Can use pre-cooked shrimp to save time
  • 1 cup fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded Divided between stuffing and topping
  • 1/2 cup Parmesan cheese, grated
Seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
For the Marinara
  • 2 cups marinara sauce
Garnish
  • Fresh basil for garnish (optional)

Method
 

Preparation
  1. Preheat oven to 375°F (190°C).
  2. Cook the pasta shells according to package instructions until al dente. Drain and set aside.
  3. In a bowl, combine chopped shrimp, spinach, ricotta, 1/2 cup mozzarella, Parmesan, garlic powder, onion powder, salt, and pepper.
  4. Stuff each pasta shell with the shrimp and cheese mixture.
Baking
  1. Spread a layer of marinara sauce in a baking dish.
  2. Arrange the stuffed shells in the dish and top with remaining marinara sauce and mozzarella cheese.
  3. Cover with foil and bake for 25 minutes.
  4. Remove foil and bake for an additional 10 minutes, until cheese is bubbly and golden.
Serving
  1. Garnish with fresh basil before serving.

Notes

Serve warm with a side salad or garlic bread. Sprinkle extra Parmesan cheese and fresh herbs on top for added flavor. Make sure to cook the pasta shells just until al dente to prevent breaking when stuffed. For a spicy kick, add red pepper flakes to the marinara sauce.
