Ingredients

Shortbread Cookies
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
Filling
  • 1/2 cup Nutella

Equipment

  • Large bowl
  • Electric mixer
  • Plastic wrap
  • Rolling pin
  • 2-inch round cookie cutter
  • Baking sheet
  • Parchment paper
  • Wire rack

Method

Preparation
  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  2. Gradually add the all-purpose flour and salt, mixing until just combined to form a soft dough.
  3. Flatten the dough into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  4. On a lightly floured surface, roll out the chilled dough to 1/4-inch thickness, then cut out cookies using a 2-inch round cutter.
  5. Place cookies on a parchment-lined baking sheet and bake at 350°F (175°C) for 12-15 minutes, or until edges are lightly golden. Cool completely.
  6. Spread 1-2 teaspoons of Nutella on the flat side of one cookie and top with another cookie to create a sandwich.

Notes

For best results, ensure your butter is truly softened but not melted. You can also add a touch of vanilla extract to the shortbread dough for extra flavor.
