Preparation
- Preheat your oven to 400°F (200°C).
- Cut the potatoes into bite-sized pieces and place them on a sheet pan.
- Drizzle with olive oil, season with salt and pepper, and toss to coat.
Cooking
- Roast the potatoes in the oven for about 20 minutes.
- While the potatoes are roasting, prepare the salmon by seasoning it with salt, pepper, and minced garlic.
- After 20 minutes, remove the sheet pan from the oven, push the potatoes to the side, and place the salmon fillets on the sheet pan.
- Add butter and fresh dill on top of the salmon.
- Return the sheet pan to the oven and roast for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Notes
Serve warm with a green salad or steamed vegetables. Leftovers can be stored in an airtight container in the refrigerator for 2-3 days. For added flavor, consider marinating the salmon before cooking.
