Main Ingredients
  • 4 fillets Salmon fillets Use fresh or thawed frozen salmon.
  • 2 pounds Potatoes Cut into bite-sized pieces.
  • 3 cloves Garlic Minced.
  • 4 tablespoons Butter For topping the salmon.
  • 1 bunch Fresh dill Chopped, for garnish.
  • 2 tablespoons Olive oil For coating potatoes.
  • 1 teaspoon Salt Adjust according to taste.
  • 1 teaspoon Pepper Adjust according to taste.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut the potatoes into bite-sized pieces and place them on a sheet pan.
  3. Drizzle with olive oil, season with salt and pepper, and toss to coat.
Cooking
  1. Roast the potatoes in the oven for about 20 minutes.
  2. While the potatoes are roasting, prepare the salmon by seasoning it with salt, pepper, and minced garlic.
  3. After 20 minutes, remove the sheet pan from the oven, push the potatoes to the side, and place the salmon fillets on the sheet pan.
  4. Add butter and fresh dill on top of the salmon.
  5. Return the sheet pan to the oven and roast for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Notes

Serve warm with a green salad or steamed vegetables. Leftovers can be stored in an airtight container in the refrigerator for 2-3 days. For added flavor, consider marinating the salmon before cooking.
