  • 4 fillets Salmon fillets Fresh salmon is recommended.
  • 1 whole Lemon Juice to be used in sauce.
  • 3 cloves Garlic Minced.
  • 4 tablespoons Butter Melted.
  • 1 cup Feta cheese Crumbled.
  • 1 cup Olives Sliced or whole, based on preference.
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt To taste.
  • 1 teaspoon Pepper To taste.
  • 1 bunch Fresh parsley For garnish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. On a large sheet pan, place the salmon fillets.
Making the Sauce
  1. In a bowl, mix melted butter, minced garlic, lemon juice, salt, and pepper.
  2. Pour the mixture over the salmon.
  3. Scatter feta cheese and olives around the salmon.
Cooking
  1. Roast in the oven for 15-20 minutes or until the salmon is cooked through.
  2. Garnish with fresh parsley before serving.

Notes

Serve warm with rice, quinoa, or a fresh green salad. Drizzle leftover juices from the pan over the salmon for extra flavor. Store leftovers in an airtight container in the refrigerator for up to three days.
