Crust
  • 3 cups 3 cups cinnamon graham cracker crumbs (300 grams; see note)
  • 1/2 cup 1/2 cup + 3 tbsp salted butter, melted (155 grams)
Cheesecake Filling
  • 32 oz 32 ounces cream cheese, at room temperature (full-fat, block style)
  • 1 and 1/2 cups 1 and 1/2 cups granulated sugar (308 grams)
  • 4 large 4 large eggs, at room temperature
  • 2 tsp 2 tsp vanilla extract
  • 1 and 1/2 tsp 1 and 1/2 tsp cornstarch
  • 3/4 cup 3/4 cup full-fat sour cream, at room temperature (180 grams)
  • 1 tsp 1 tsp cinnamon
  • 1/4 tsp 1/4 tsp nutmeg
  • 1/8 tsp 1/8 tsp ground cloves
  • 1/4 cup 1/4 cup all-purpose flour (33 grams)
Crumble Topping
  • 1/2 cup 1/2 cup old-fashioned whole rolled oats (48 grams)
  • 1/4 cup 1/4 cup brown sugar, packed (55 grams)
  • 1/2 tsp 1/2 tsp cinnamon
  • 1/8 tsp 1/8 tsp salt
  • 1/4 cup 1/4 cup cold salted butter, cubed (4 tbsp, or 57 grams)
Salted Caramel Sauce
  • 1 cup 1 cup granulated sugar (210 grams)
  • 6 tbsp 6 tbsp salted butter, cubed (85 grams)
  • 1/2 cup 1/2 cup + 1 tbsp heavy cream (135 grams)
  • 1 pinch Pinch of flaky sea salt

Method
 

Preparation
  1. Start by reading through the recipe to gather all your ingredients.
Make the Apple Filling
  1. Peel and slice the apples.
  2. In a medium pan over medium-high heat, combine apples, butter, cider, brown sugar, and spices.
  3. Cook for about 8-14 minutes until tender.
  4. If needed, thicken the juices using cornstarch mixed with water.
Make the Crust
  1. Preheat your oven to 350°F (175°C).
  2. Spray a 9-inch springform pan.
  3. Mix crust ingredients and press into the pan.
  4. Bake for 10 minutes.
  5. Keep the oven on.
Make the Cheesecake
  1. Ensure all ingredients are at room temperature.
  2. Beat the cream cheese until creamy, then add sugar.
  3. Mix in eggs one at a time, followed by vanilla, cornstarch, sour cream, and spices.
  4. Pour half the batter into the crust, add apple filling on top, then pour the remaining batter.
Prep Water Bath
  1. Place the cheesecake in the oven with a roasting pan below it filled with water to prevent overcooking.
Bake
  1. Bake for 1 hour and 30 to 1 hour and 50 minutes until set.
Cool & Chill
  1. Once baked, let it cool in the oven for an hour, then refrigerate for at least 6 hours.
Make Crumble Topping
  1. While baking, prepare the crumble by mixing the ingredients and baking until golden.
Make Salted Caramel Sauce
  1. Follow the recipe for making salted caramel, then let cool.
Make Apple Pie Topping
  1. Repeat the process for the apple filling to create a topping.
Serve
  1. Top the cheesecake with apple pie topping, crumble, and caramel sauce.

Notes
