Ingredients
  

Main Salad
  • 2 medium apples e.g., Fuji or Honeycrisp, cored and diced
  • 3 large carrots peeled and shredded
  • 1/2 cup dried cranberries
  • 1/4 cup fresh parsley chopped (optional)
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Method
 

Preparation
  1. Prepare the salad ingredients by dicing the apples and shredding the carrots. If using, chop the fresh parsley.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey or maple syrup, Dijon mustard, salt, and pepper until well combined.
  3. In a large mixing bowl, combine the diced apples, shredded carrots, and dried cranberries. Add the chopped parsley if desired.
  4. Pour the dressing over the salad mixture and toss gently until all ingredients are evenly coated. Serve immediately or chill for later.

Notes

For best results, chill the salad for at least 30 minutes before serving to allow the flavors to meld. You can also add chopped walnuts or pecans for extra crunch.
