Prepare the Broth
- Combine chicken broth, soy sauce, mirin, grated ginger, minced garlic, sesame oil, and chili garlic sauce (if using) in a large pot.
- Bring the broth to a simmer over medium heat and let it gently cook for 15-20 minutes to allow the flavors to meld.
Cook Noodles and Assemble
- While the broth simmers, cook the ramen noodles according to package directions, then drain them well.
- Gently peel the soft-boiled eggs and slice the green onions and nori into desired pieces.
- Divide the cooked noodles among four serving bowls, then ladle the hot broth over the noodles.
- Arrange the soft-boiled eggs, sliced roasted pork, bok choy, green onions, and nori strips on top of the ramen in each bowl.
