Ingredients
  

For the stuffed peppers
  • 4 large bell peppers Choose colorful varieties for visual appeal.
  • 1 pound ground turkey Lean protein ideal for keto.
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or mozzarella) Use any cheese you prefer.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • for drizzling Olive oil

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
Cooking
  1. In a skillet over medium heat, cook the ground turkey until browned.
  2. Add the diced tomatoes, garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir and cook for another 5 minutes.
  3. Stuff the mixture into each bell pepper and place them in a baking dish.
  4. Sprinkle cheese on top of each stuffed pepper and drizzle with olive oil.
  5. Cover the dish with foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  7. Let cool for a few minutes before serving.

Notes

These stuffed peppers are a complete meal but can be served with a side salad or steamed vegetables for extra nutrition. Store leftovers in an airtight container for 3-4 days or freeze them for longer storage.
