  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth Use low-sodium broth if desired.
  • 1 can diced tomatoes
  • 1 teaspoon cumin Adjust based on taste preferences.

Cooking Steps
  1. In a large pot, heat a little oil over medium heat. Add the chopped onion and minced garlic, sauté until translucent.
  2. Add the ground turkey and cook until browned.
  3. Stir in the kidney beans, black beans, diced tomatoes, chicken broth, cumin, salt, and pepper.
  4. Bring to a simmer and cook for about 20 minutes.
  5. Taste and adjust seasoning if necessary.
  6. Serve hot, garnished with chopped cilantro or parsley if desired.

Notes

Store leftovers in an airtight container in the refrigerator for about 3 to 4 days, or freeze for up to 2 months. Optional variations include swapping ground turkey for ground beef or chicken, or using different types of beans.
