  • 2 cups cooked rice Use white or brown rice.
  • 1 cup black beans, drained and rinsed Remove excess sodium.
  • 1 cup corn, frozen or canned For added sweetness.
  • 1 count bell pepper, diced Any color works.
  • 1 teaspoon garlic powder For flavor.
  • 1 teaspoon onion powder For flavor.
  • to taste Salt and pepper To taste.
  • 1 tablespoon Olive oil For cooking.
  • optional Fresh cilantro for garnish Enhances flavor.

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat.
  2. Add the ground turkey and cook until browned, breaking it apart with a spatula.
  3. Stir in garlic powder, onion powder, salt, and pepper.
  4. Add the bell pepper, black beans, and corn. Cook for another 5-7 minutes until the peppers are tender.
Serving
  1. Serve the mixture over the cooked rice, garnished with fresh cilantro if desired.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. For freezing, portion the turkey mixture for up to three months.
