  • 12 oz dried short pasta (e.g., small shells)
  • 2 heads broccoli (chopped into small florets)
  • 1 cup shredded cheese (e.g., mozzarella or cheddar)
  • 2 tsp lemon zest (fresh for maximum flavor)
  • 2 tbsp lemon juice (adjust to taste)
  • 5 tbsp extra virgin olive oil (or butter if preferred)
  • 1/3 cup parmesan cheese (finely grated)
  • 2 cloves garlic (minced)
  • 1 tsp mixed dried herbs (or fresh herbs)
  • 1/2 tsp red pepper flakes (optional for spiciness)
  • 1 tsp sugar (optional)
  • 3/4 tsp salt (to taste)
  • 1/2 tsp pepper (to taste)

Method

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. In the last 3 minutes of cooking, add the chopped broccoli to the pot. Drain the pasta and broccoli, then set aside.
  2. In the same pot, heat the olive oil (or butter) over medium heat. Add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes until fragrant.
  3. Return the cooked pasta and broccoli to the pot. Stir in the shredded cheese, lemon zest, lemon juice, parmesan cheese, and mixed herbs. Season with salt, pepper, and sugar (if using). Mix well until the cheese is melted and everything is combined.
  4. Taste and adjust seasoning if needed. Serve warm.

Notes

For added flavor, use homemade or fresh pasta if available. Experiment with different types of cheese for a unique twist. If you like a crunchy texture, consider toasting some breadcrumbs to sprinkle on top before serving. Store any leftovers in an airtight container in the refrigerator for up to 3 days.
