Prepare the Crust
- In a large bowl, whisk together flour, sugar, and salt. Cut in the cold butter until coarse crumbs form. Gradually add ice water, mixing until just combined. Press the dough evenly into the bottom of a 9x13 inch baking dish.
Make the Filling
- In another bowl, whisk together pumpkin puree, brown sugar, granulated sugar, cinnamon, ginger, nutmeg, cloves, and salt. Beat in the eggs one at a time, then stir in the heavy cream until smooth.
Bake the Bars
- Pour the pumpkin filling over the crust in the prepared baking dish. Bake at 375°F (190°C) for 45-55 minutes, or until the center is just set and the edges are slightly puffed.
Cool and Serve
- Let the pumpkin pie bars cool completely on a wire rack before refrigerating for at least 2 hours to chill thoroughly. Cut into squares and serve, optionally with whipped cream.

For best results, ensure the pie bars are completely chilled before cutting to achieve clean slices. These bars are delicious served plain or topped with a dollop of fresh whipped cream or a sprinkle of extra cinnamon.
