Ingredients
  

Crust
  • 1.5 cups Graham cracker crumbs
  • 1/4 cup Granulated sugar
  • 1/2 cup Melted butter
Cream Cheese Layer
  • 8 oz Cream cheese softened
  • 1 cup Powdered sugar
  • 2 tbsp Milk
  • 1 cup Whipped topping thawed, divided
Pumpkin Pudding Layer
  • 2 packages Instant vanilla pudding mix (3.4 oz each)
  • 3 cups Milk cold
  • 1 can Pumpkin puree (15 oz)
  • 1 tsp Pumpkin pie spice
Topping
  • 2 cups Whipped topping thawed
  • Ground cinnamon for dusting (optional)

Method
 

Prepare the Crust
  1. Combine graham cracker crumbs, sugar, and melted butter; press firmly into a 9x13 inch baking dish. Bake at 350°F (175°C) for 10 minutes, then cool completely.
Make Cream Cheese Layer
  1. Beat softened cream cheese and powdered sugar until smooth; mix in milk and 1 cup of whipped topping until combined. Spread this mixture evenly over the cooled crust.
Create Pumpkin Pudding Layer
  1. Whisk instant vanilla pudding mixes with cold milk until thickened, then beat in pumpkin puree and pumpkin pie spice. Carefully spread the pumpkin mixture over the cream cheese layer.
Finish and Chill
  1. Spread the remaining whipped topping over the pumpkin layer, then refrigerate for at least 4 hours, or preferably overnight, until firm. Dust with ground cinnamon before serving, if desired.
