Preparation
  1. Preheat your oven to 400°F (200°C) to ensure it is ready for baking.
Rolling and Cutting Pastry
  1. Roll out the thawed puff pastry sheets on a lightly floured surface to about 1/8 inch thickness.
  2. Cut the pastry into squares or rectangles, depending on your desired shape for the desserts.
Filling and Sealing
  1. Place a spoonful of fresh fruit in the center of each pastry square. You can mix the fruit with a little sugar if desired.
  2. Fold the pastry over the fruit to create a pocket, and pinch the edges to seal well. Use a fork to crimp the edges for a decorative touch.
  3. Brush the tops with beaten egg for a golden finish, if desired.
Baking
  1. Place the filled pastries on a baking sheet lined with parchment paper.
  2. Bake in the preheated oven for about 15-20 minutes or until golden brown and puffed up.
