Preparation
- Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
- In a large bowl, whisk together 10 large eggs, ½ teaspoon salt, ½ teaspoon black pepper, ½ teaspoon garlic powder, ½ teaspoon onion powder, and ½ teaspoon dried oregano (if using).
- Gently fold in 2 cups of cottage cheese and ¾ cup of the shredded cheddar cheese until just combined.
- Gently fold in optional add-ins like 1 cup chopped fresh spinach, ½ cup diced bell peppers, and ½ cup diced cooked chicken, beef, or turkey bacon.
- Pour the mixture into the prepared baking dish, spread evenly, and sprinkle the remaining ¾ cup of shredded cheese over the top.
Baking
- Bake for 30 to 40 minutes, or until set and golden brown.
- Let rest for 5-10 minutes before slicing and serving.
Notes
Serve warm or refrigerate for later. Pairs well with fresh fruit or a light salad. Can be stored in an airtight container for up to 5 days or frozen in portions.
