  • 1 cup Greek yogurt Use plain Greek yogurt for best flavor
  • 1 cup sugar Adjust to taste if needed
  • 1/2 cup cocoa powder
  • 1/2 cup flour Can substitute with gluten-free flour blend
  • 2 pieces eggs Add an extra egg for a fudgier texture
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the Greek yogurt and sugar until smooth.
  3. Add in the eggs and mix well.
  4. Stir in the vegetable oil and vanilla extract.
  5. In another bowl, whisk together the cocoa powder, flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  7. Pour the batter into a greased baking pan and spread evenly.
Baking
  1. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  2. Let cool before cutting into squares.

Notes

Store brownies in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. For extended storage, wrap tightly and freeze for up to three months. Additional mix-ins can include nuts, chocolate chips, or dried fruit.
