Preparation
- Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
Mixing
- In a medium bowl, whisk together flour, baking powder, salt, and pumpkin pie spice; set aside.
- In a large bowl, combine the melted butter with brown sugar and granulated sugar, mixing until smooth.
- Stir in the pumpkin puree, egg, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined and no streaks of flour remain.
- Gently fold in the chocolate chips, if using, ensuring they are evenly distributed.
Baking & Cooling
- Pour the batter into the prepared baking pan and spread evenly; bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let the blondies cool completely in the pan on a wire rack before lifting out and cutting into squares.
