  • 2 tsp Pumpkin pie spice
Wet Ingredients
  • 1/2 cup Unsalted butter (1 stick), melted
  • 1 cup Packed light brown sugar
  • 1/2 cup Granulated sugar
  • 1/2 cup Pumpkin puree (not pumpkin pie filling)
  • 1 Large egg
  • 1 tsp Vanilla extract
Mix-ins (Optional)
  • 1 cup Chocolate chips

Method
 

Preparation
  1. Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
Mixing
  1. In a medium bowl, whisk together flour, baking powder, salt, and pumpkin pie spice; set aside.
  2. In a large bowl, combine the melted butter with brown sugar and granulated sugar, mixing until smooth.
  3. Stir in the pumpkin puree, egg, and vanilla extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and no streaks of flour remain.
  5. Gently fold in the chocolate chips, if using, ensuring they are evenly distributed.
Baking & Cooling
  1. Pour the batter into the prepared baking pan and spread evenly; bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  2. Let the blondies cool completely in the pan on a wire rack before lifting out and cutting into squares.
