Preparation
- Preheat your oven to 375°F (190°C).
- In a bowl, mix the sliced peaches with sugar, cornstarch, vanilla extract, and cinnamon. Set aside.
- Take a sheet of fillo pastry, brush it with melted butter, and layer it with another sheet. Repeat for 5-6 sheets.
Assembly and Baking
- Pour the peach filling into the center of the layered fillo pastry.
- Fold and crinkle the pastry around the filling to form a rustic pie shape.
- Bake in the oven for 25-30 minutes, or until golden brown.
Serving
- Let it cool slightly, then dust with powdered sugar before serving.
