For the pastry

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the sliced peaches with sugar, cornstarch, vanilla extract, and cinnamon. Set aside.
  3. Take a sheet of fillo pastry, brush it with melted butter, and layer it with another sheet. Repeat for 5-6 sheets.
Assembly and Baking
  1. Pour the peach filling into the center of the layered fillo pastry.
  2. Fold and crinkle the pastry around the filling to form a rustic pie shape.
  3. Bake in the oven for 25-30 minutes, or until golden brown.
Serving
  1. Let it cool slightly, then dust with powdered sugar before serving.
