Ingredients
  

Chicken and Coating
  • 4 pieces chicken breasts (boneless skinless)
  • 1 cup bread crumbs (panko works well) For extra crunch, use panko breadcrumbs.
  • 1 cup grated Parmesan cheese (fresh recommended)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 cloves garlic (minced)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for cooking)

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a shallow dish, mix together the breadcrumbs, half of the grated Parmesan, and Italian seasoning.
  3. In another bowl, beat the eggs and milk together until smooth.
  4. Place the all-purpose flour in a third dish.
  5. Dredge each chicken breast in the flour, dip it in the egg mixture, then coat it with the breadcrumb mixture.
Cooking
  1. Heat olive oil in a frying pan over medium heat. Cook the chicken for 3-4 minutes on each side until golden brown.
  2. Transfer the browned chicken to a baking dish.
  3. In a separate bowl, mix the remaining Parmesan with mozzarella and minced garlic. Sprinkle this mixture over the chicken.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and bubbling.

Notes

Let the chicken sit in the egg mixture for a few minutes to help the coating stick better. Experiment with different cheeses such as feta or cheddar for a unique flavor. Serve with marinara sauce on the side for dipping.
