Preparation
- Preheat the oven to 375°F (190°C).
- In a shallow dish, mix together the breadcrumbs, half of the grated Parmesan, and Italian seasoning.
- In another bowl, beat the eggs and milk together until smooth.
- Place the all-purpose flour in a third dish.
- Dredge each chicken breast in the flour, dip it in the egg mixture, then coat it with the breadcrumb mixture.
Cooking
- Heat olive oil in a frying pan over medium heat. Cook the chicken for 3-4 minutes on each side until golden brown.
- Transfer the browned chicken to a baking dish.
- In a separate bowl, mix the remaining Parmesan with mozzarella and minced garlic. Sprinkle this mixture over the chicken.
- Bake for 20-25 minutes, or until the chicken is cooked through and bubbling.
Notes
Let the chicken sit in the egg mixture for a few minutes to help the coating stick better. Experiment with different cheeses such as feta or cheddar for a unique flavor. Serve with marinara sauce on the side for dipping.
