  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 3 large eggs
  • 0.5 cup vegetable oil
  • 1 cup orange juice freshly squeezed
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
Orange Glaze
  • 1.5 cups powdered sugar
  • 3-4 tablespoons orange juice freshly squeezed

Method
 

Baking the Cake
  1. Preheat your oven to 350°F (175°C) and grease and flour a 9x13 inch baking pan or a bundt pan.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.
  3. In a separate bowl, whisk together the eggs, vegetable oil, orange juice, orange zest, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
  5. Pour the batter into the prepared pan and bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
Making the Glaze
  1. While the cake cools slightly, whisk together the powdered sugar and orange juice in a small bowl until smooth.
  2. Drizzle the glaze over the warm cake and let it set before serving.

Notes

For an extra citrus kick, soak the baked cake with a simple syrup made from equal parts sugar and orange juice before applying the glaze.
