Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cardamom
Wet Ingredients
  • 1/2 cup unsalted butter, melted Ensure butter is melted but not too hot.
  • 1 cup milk
  • 2 large eggs At room temperature.
  • 1 tablespoon zest of orange
  • 1/2 cup orange juice
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cardamom.
  3. In another bowl, mix the melted butter, milk, eggs, orange zest, orange juice, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill the muffin cups about 2/3 full with the batter.
Baking
  1. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  2. Allow to cool slightly before serving. Enjoy your muffins warm!

Notes

Serve these muffins warm or at room temperature. They pair well with coffee or tea. Store in an airtight container for up to three days, or freeze them for up to three months.
